Looking for the perfect appetizer to serve at your holiday party? I’ve got one for you. I made these shrimp crostinis for a dinner party recently and they were a hit! This delicious recipe was given to me from a dear friend of mine.
Here is what you will need for the shrimp crostinis.
1 french baguette
1 lb peeled shrimp cooked and chopped (frozen and thawed will work)
1 cup mayo
1 cup shredded Parmesan cheese
3/4 cup shredded Mozzarella cheese
1/4 cup minced fresh parsley
2/3 cup green onion chopped
1/2 teaspoon ground red pepper aka cayenne pepper
First, you will need to slice the baguette into rounds about 1/2″ inch thick. Bake the rounds at 350 degrees for about 5 minutes or until the rounds get a little toasty.
Grab the remaining ingredients and mix them into a bowl.
Place 1 hefty scoop on each round.
Once you have the shrimp mixture placed on rounds, place in the oven and bake at 375 degrees for about 8-10 minutes. The crostinis should have a golden brown color.
Let them cool for 1-2 minutes out of the oven. Serve and enjoy! These little things are soooo delicious and will definitely be a hit! Please let me know how they turn out…
