Sorry for the delayed post today, but i’m home nursing an injury from a moving mishap and moving pretty slow all around 🙂
But anywho, on to business! Who doesn’t love macaroni & cheese?? If you don’t, it’s time to exit stage left and follow a different blog! Just kidding but maybe this recipe will help change your mind 🙂
I usually make a traditional baked macaroni and cheese with just cheese and macaroni noodles but I decided to put a little twist on it and came up with a 3 cheese macaroni and cheese with bacon and shrimp!
What you need:
1lb box of macaroni
1/2 lb white and yellow cheddar cheese
1/4 lb parmesan cheese
1/2 lb swiss cheese
1/2 lb shrimp
1/2 packet of old bay crab cake seasoning
6 strips of bacon
1/2 stick of butter
Start by cooking your bacon in the oven according to the package instructions. At the same time peel and boil your shrimp in about 2 inches of water that has been seasoned with the 1/2 packet of Old Bay seasoning. Once the bacon and shrimp are finished, dice both up and set aside. You’ll also want to cook your noodles until al dente.
If your cheese wasn’t already shredded when you bought it, use a shredder to shred the cheese and put all the types(swiss, parmesan & cheddar) into a large boil.
Add the shrimp, bacon and macaroni to the cheese and mix together.
Dice the 1/2 stick of butter and add it to the macaroni mix. Slowly add in the whole milk until the you’re able to see is cover the bottom of the bowl. Transfer the mix to your baking pan.
Put the pan into the 350 degree preheated oven and cook for 30-45 minutes. Being sure to check the dish periodically. About half way through, stir the mix to make sure the cheese/shrimp/bacon are evenly distributed. After twenty or so minutes, sprinkle the top with breadcrumbs. This will give the macaroni a nice crunchy crust on the top.
Once the macaroni & cheese begins to brown around the edges, it’s all done and ready to enjoy!
