I love pretty much all foods, as I’m sure you all are well aware of by now. However, one of my fav type of food is Italian. The pasta, the cheeses, the robust flavors… I seriously love it all!
Today’s recipe is for Carbonara. A really simple dish with a fancy name & great flavor!
What you need:
5 oz of diced bacon
1 tbsp crushed garlic
1 large shallot
1/2 cup peas(optional)
1 cup fresh parmesan
1/2 cup chicken stock
Put water on for the fettuccine and once it begins to boil, add your pasta to the water. Let it cook until al dente.
While the fettuccine cooks, begin browning your diced bacon in a skillet. While the bacon is cooking, dice your shallot and set it aside. Once the bacon is finished, remove it from the skillet, leaving about a tablespoon or so of the renderings in the skillet and dd the shallot, crushed garlic and 1/2 cup of peas to the pan. Saute until the shallots become translucent and the peas soften.
Add the bacon back into the skillet.
Once your fettuccine is done, drain it and fold it into your bacon & shallot mixture. In a bowl, mix your two eggs and the cup of Parmesan cheese together until a smooth mixture has been created.
Remove the skillet from the heat and pour the egg/Parmesan mixture into the pasta. Make sure the skillet isn’t too hot when you do this or the eggs will scramble. Yikes! In order to create a “sauce” here, you can begin to slowly add in the chicken stock, until the desired consistency is reached, while you stir in the egg mixture.
And there you have it! This dish is super easy & unbelievably fast. Not to mention the fact that the whole dish is created using only two pans which makes for easy clean up!
