Who doesn’t love pasta? I know we surely do! It’s quick , tasty and satisfying. But why resolve to the same ‘ol spaghetti and jar pasta sauce when you can create a simple dish from scratch that will leave you & your dinner guests impressed?

Our recipe of the day is for pesto!

What you’ll need:

3 tightly packed cups of fresh basil leaves

1/4 cup pine nuts

2 garlic cloves

1/2 cup freshly grated Parmesan cheese

1/2 cup olive oil

Salt to taste

Black pepper to taste

How to do it:

Place the 3 cups of basil, 1/4 cup of pine nuts and the 2 cloves of garlic into a food processor and pulse until the pine nuts & basil are chopped and blended with the garlic. Once those have blended together, add in the cup of grated Parmesan and the salt and pepper. Process until the leaves have begun to further break down. While the processor is still running, slowly add in the 1/2 cup of olive oil through the feed tube at the top of the processor.

Once the ingredients are blended together, you’ll want to taste the pesto to see if any more salt or pepper needs to be added(you may also want to use this time to add in red pepper flakes for an additional “umph!”). You don’t want the seasoning to over power the basil leaves, but you also want a balanced flavor.

Voila!

The best part about pesto is that it is incredibly versatile. You can toss it with warm pasta for a simple side dish or incorporate it while cooking chicken or shrimp for a more complete meal. Pesto with shrimp and fresh linguine is a personal favorite of mine!
